I have always wanted to try cooking with a pressure cooker, so was beyond excited when I received an 8 quart Power Pressure Cooker XL for Christmas this year.  After familiarizing myself with my newest kitchen gadget, I couldn't wait to try it out.  Many of the recipes in the included cookbook are for ingredients many of us already have on hand.  From simple macaroni and cheese to pork roast, the Power Pressure Cooker XL is turning out to be a fast and easy to use small kitchen appliance that gets meals on the table in a hurry that normally take hours to prepare.

Did you ever wonder what is for dinner, and you don't have a plan?  This happened to me, when I spotted my new Power Pressure Cooker XL.  Looking through the ingredients I had on hand, I quickly realized that I had everything to make traditional macaroni and cheese.  This is a perfect recipe for a cold winter night when you want a meal that is creamy and comforting.


1 cup water

2 cups milk

1 ½ cups shredded cheddar cheese 

1 Tablespoon butter

2 cups dry elbow macaroni

1/2 tsp salt

  1. Place a greased inner pot in Power Pressure Cooker XL and press the Rice/Risotto button.

  2. Melt the butter in the inner pot and then add the macaroni noodles and water.  Stir to combine.

  3. Cook with lid off until water has absorbed, stirring frequently.  It should take about 3-5 minutes for the water to absorb.

  4. Once the water has absorbed into the noodles, stir in the the milk, cheese, and salt.

  5. Place the lid onto the Power Pressure Cooker XL, ensuring the pressure release valve is closed, and lock the lid into place.  Press the Warm/Cancel button to reset the timer

  6. Press the Rice/Risotto button and then the Time Adjustment button until the timer has reached 10 minutes.  It will take about 5 minutes to reach full pressure

  7. Once the timer has reached 0, use tongs to carefully switch the pressure release valve open.  When steam stops coming out of the valve, it is safe to take the lid off

  8. There may still be a little liquid on the top layer of the mac and cheese, but stir it in to create a creamy texture. 

This makes 2 large servings or can be used as a side dish.  This recipe can easily be doubled to make enough for a family.  For some extra flavor, add some fresh cracked black pepper and 1/2 teaspoon of paprika.  Please note, that even with greasing the inner pot, I had problems with noodles sticking to the bottom of the pot and becoming slightly burned.  


If you bought a Power Pressure Cooker XL you may have received a Power Chopper XL as an included accessory.  Maybe you have used a Slap Chop, or a Cuisinart Stainless Steel Choppers.  They have the same design, and in my experience the same results.  You need to use a knife to prepare things for the Power Chopper XL, then chop small amounts with the Power Chopper XL, and then have a mess to clean up with the Power Chopper XL and a knife.  I do not have strong hands, and would like this to be a solution to chopping.  It is easy to get cut on this, and is more trouble than it is worth.  These will soon be at lots of garage sales because they are not that effective, and clutter up the kitchen.  Power Chopper is it worth it?  Power Chopper does it really work?
