Recommended With Your Masterbuilt Smoker



Ready to season your cast iron skillets and pans?  Use your Masterbuilt Electric Smoker to season or preseason your cast iron cookware.  

Scrub your cast iron with kosher salt and a paper towel or stiff brush.  

Spread vegetable oil or vegetable shortening over the surface of your cast iron, inside and outside.  Cover the entire surface of the cast iron.  

Place your cast iron skillet, fry pan, or dutch oven upside down on the top rack of the Masterbuilt electric smoker.  

Turn the smoker on high, and set the time for 3-4 hours.  

Allow the smoker and cast iron pan to cool completely.  

Your cast iron should be seasoned and ready to use with no mess inside the house or kitchen


Smoked Lemon Pepper Chicken is easy with your Masterbuilt Electric Smoker.  Set your smoker at 225 degrees, and smoke a whole body chicken 45 minutes per pound, or 3-4 hours.  Rinse and pat your chicken dry with paper towels, remove anything in the chicken's cavity.

 To make a lemon pepper rub for smoking or grilling your lemon pepper chicken, stir together lemon pepper, garlic, salt, lemon zest, and black pepper.

 Rub olive oil over your chicken inside and out, and tuck in the wings.  

Stuff a cut lemon into the cavity along with several sprigs of fresh rosemary.  Sprinkle the rub mixture all over the chicken.  Smoke at 225 degrees for a delicious, moist, and savory lemon pepper chicken.  

Smoke the chicken on a middle rack, and remove the top rack to make sure there is room for your whole body chicken.  

How do you know when your chicken is done?  Chicken should be 165 degrees for white meat, 180 degrees for dark meat.  The meat should pull away from the bone, and juices should run clear. 

Allow the chicken to rest, cover with foil, for 20 minutes before serving.  You will love this smoked lemon pepper chicken recipe for the Masterbuilt Electric Smoker.


Cajun rub recipe is mildly spicy and perfect for smoking ribs or other meats on your Masterbuilt Smoker.  Try this Cajun rub mixture for barbecue or blackened steaks, shrimp, ribs, chicken, blackened fish, or spice up soups, gumbos or sauces.   Rub your ribs with oil, sprinkle with the Cajun mixture, and marinate in the refrigerator 4 - 24 hours.  Bring your meat to room temperature, and smoke, grill, or bake delicious ribs with a Cajun kick!  Dry Rub mixtures are easy and delicious.

1/4 c Salt
1/4 c Paprika
1 T Garlic Powder
1 T Onion Powder
1 T Oregano
1 T Cayenne Pepper
3 T Black Pepper


Meat is done when the temperature at its thickest point considered safe to eat.  Ribs are done at 145 degrees, but may still be tough.  Ribs cooked to 190 degrees make the meat more tender and juicy. 

Use a meat thermometer to test the temperature in the middle.  Meat by the bone may be a higher temperature.  Ribs should not fall off the bone, they should pull off the bone with your teeth!




There is nothing more delicious than smoked salmon.  Smoked salmon done with alder wood from the Pacific Northwest and Alaska is a treat for special occasions and everyday meals. 

Smoked salmon doesn't last very long unless you freeze or can it.  Smoke the amount of salmon you plan to eat within a few days.

One clean up tip to be aware of after smoking any kind of salmon or fish, is that fish is loaded with extra oils.  The oils can drip inside of a smoker and leave a "fishy" smell build up inside of your smoker unless you take an extra clean up step. 

Don't take a chance that you might contaminate your next smoked meat with a "fishy" smell.  Do one extra easy step when you finish smoking fish to eliminate any residue from fish.  

Set your smoker to high and let it burn off the residue for an extra hour after you have removed your salmon or other smoked fish.

You only need 2 ingredients, corn and bacon!  Corn is best when fresh, so don't buy it too far ahead of time.  Remove corn husks and silk.  Clean your corn, and snap each ear in half.  Wrap nice, thick strips of Applewood smoked bacon around your corn sections.  Smoke your corn on the cob for about 2 hours at 200 degrees for a flavorful addition to any smoked meats.

Smoked Potatoes  Smokers are a great way to cook meat and vegetables.  Here are easy and simple directions for how to prepare and smoke potatoes.  I love sliding potato slices into my Masterbuilt electric smoker when I am smoking meats.  Smoky potato slices or chips are good, and simple.  

Here is a simple recipe to use with your smoker.  

Slice potatoes, splash olive oil and a few seasonings, salt, pepper, and paprika.  Add the potatoes to your smoker for a flavorful side dish.  Smoke potatoes at 200 degrees, for 1 1/2 - 2 hours.

Follow these tips to set up your Masterbuilt Electric Smoker so you will have easy set up and clean up.  

Don't crowd chips into your chip tray.  Give the oxygen room for a clean burn.   

No need to soak your chips, they smoke great dry.  

Place an aluminum disposable pan above the burner instead of the included water tray for easier clean up.  

Cover the drip pan with foil.

Lay a sheet of foil under the front to catch drips when you open the door.

The nice thing about a Masterbuilt Electric Smoker is they are ready to go right out of the box.  

All you need to do is unwrap the smoker, and attach the control panel.  The smoker comes with 2 included screws and a Phillips Head Screwdriver.  

Open the Masterbuilt Smoker box, and remove the smoker.  Open the box on the bottom, and pull it off the smoker unit.  Remove the protective wrappings from your Masterbuilt Smoker.

Position the controls on the top of the smoker box, and attach the controls with the screws.  Use a Philips Head screwdriver.

Your Masterbuilt Electric Smoker is ready to plug in and use.  Make sure you season your Masterbuilt Smoker before your first time smoking food.



If you love the flavor of Bananas Foster, the deliciousness of butter, brown sugar, and rum, try adding a smoky flavor layer with your Masterbuilt Electric Smoker.  Smoked bananas are a delicious dessert treat prepared in a Masterbuilt Smoker.  

Heat up your smoker to 150 degrees.

Slice overly ripe bananas length wise.  Place in the smoker for 30-45 minutes.

In a saucepan over low heat, combine

1/4 cup butter

1/4 cup brown sugar

1/2 teaspoon cinnamon

Once the sugar is dissolved and the butter is melted, stir in 

1 generous shot of rum.  Spiced rum works well, too.  

Remove bananas from smoker, place on a plate.  Top with sauce, and light a flame.  

Voila, smoked bananas foster.  Enjoy!

Do you love the flavors of fruit and rum?  If so, you will love my recipe for smoked fresh pineapple prepared in the Masterbuilt Electric Smoker.  

Preheat your smoker to 250 degrees. 

Cut your fresh pineapple into a pineapple bowl or boat.  Slice it in half, start at the bottom, cutting up through the leaves.  Cut all around the pineapple fruit and remove it from the pineapple skin.  Make sure to not cut through the outer shell of the pineapple.  This shell will be boat or bowl to smoke and serve your pineapple.  Remove the pineapple fruit from the skin with a spoon.  Cut off the hard core.

Cut the fresh pineapple into chunks and load it into your pineapple boat bowl.   Smoke your pineapple boat in the Masterbuilt Electric Smoker or other smoker, for 2 1/2 hours.

While the pineapple is smoking, make a brown sugar rum sauce. 

Stir together in a small saucepan

1/4 cup butter

1/4 cup brown sugar

Once the butter is melted and the sugar is dissolved, stir in a generous shot of rum.

Once the pineapple boat is done smoking, top it with the brown sugar rum sauce, and serve.

If you have a new Masterbuilt Electric Smoker, it needs to be seasoned, preseasoned, or cured before you cook food in it.  The manufacturing process leaves residues of oils, chemicals, and manufacturing debris.  Remove all of that with a preseasoning cycle or treatment to your Masterbuilt Electric Smoker.

 Follow step by step directions for how to pre season, season, cure your smoker, how to prepare the smoker, the time and temperature settings for seasoning, and what components to include in the seasoning process.  Rinse and spray the inside of your Masterbuilt Electric Smoker, and add wood chips through the side chip load tray during the last hour.  Your first smoke on the Masterbuilt Smoker needs to be a seasoning cycle.  Your smoker is now safe to use to smoke and cook your favorite meats and meals following your first smoke or inaugural seasoning cycle to break it in.  I love my Masterbuilt Electric Smoker.

How To Choose Wood Chips For Smoking

Different types of meats require a variety of different chips to enhance the smoky flavor of meats.  Choose apple chips for a light flavor to poultry.  Cherry is mild and fruity, so goes well with poultry, pork, or beef.  Hickory has a strong, bacony flavor.  Mesquite burns the hottest, and adds an earthy flavor to poultry, fish, pork, and wild game.  Pecan is smooth and sweet, and adds a subtle flavor to all of your favorite meats.  Use commercially prepared chips, or learn which woods to never use for smoking food.  Evergreen or coniferous woods such as pine, fir, redwood, and more are never good for smoking foods.  Other woods such as elm , eucalyptus, and others should not be used.

Finding a high quality sausage casing makes all the difference in how well your sausages are made.  I like to use 100% hog casings for my sausages and bratwurst.  Eastman Outdoor sausage casings come neatly packed, and the package can easily be resealed if you do not use all of the sausage casings at once.  They come in 10 foot sections which is a manageable size for most recipes.  Make sure to soak your sausage casings for 30 minutes, and rinse before use.  Salt any leftover casings before refreezing.  Eastman Outdoor sausage casings hold together nicely, don't rip when you are filling them, and are just the right texture when you bite into your delicious sausages.

1 Tablespoon Cayenne Pepper

If you love a great brisket, this Kansas City rub is the one for you.  Regional favorites are a great way to try varieties in flavors, and a Kansas City rub as good as this one will allow you to cook like a champ.  The ingredients are simple, and can be adapted to suit your own tastes.  Try this Kansas City Rub on your next cook out, and see if it doesn't become one of your favorite recipes.  I love using this with my Masterbuilt Smoker for that succulent, smoky flavor that can't be beat.

1/3 cup brown sugar
1/3 cup white sugar

Easiest Way To Thaw A Turkey

The easiest method for defrosting a turkey for a holiday or any meal is to place it on a rack in a pan or dish in the refrigerator.  A turkey takes several days to defrost, allow 24 hours per 4-5 pounds.  A 20 pound turkey may take 5 days. Your turkey should be thawed 1 day ahead of cooking it, and a thawed turkey can be stored in the refrigerator for 2 days after defrosting.


Roasting Pan With Rack

A nice roasting pan with a rack is a must for any kitchen.  Choose a pan that is sturdy, deep, has handles, and is light weight enough to lift with one hand when it is empty.  Adding a heavy turkey or roast to a heavy pan can be too cumbersome for some cooks.  Look for a well constructed, heavy duty pan.  Trying to maneuver heavy meats with a light weight or flimsy pan can spell disaster.  

How to Open McCormick Pepper Grinders

Do you like to reuse and refill empty spice grinders?  Some of them had lids that unscrew easily and allow you to refill and continue grinding or shaking.  The McCormick Pepper Grinder is very difficult to remove, until you try this trick.  When your grinder is empty, turn it upside down in a bowl of hot water and allow it to sit for 10 minutes.  Then grasp it in your hands and pull.  It pops right off, and you can clean it out, let it dry, and refill with pepper or any spice you care to grind.  Try this trick for opening a McCormick Pepper Grinder so you can refill and reuse your grinder.
