Crock pot pinto beans are easy to make with only 4 ingredients.  This easy recipe makes pinto beans with a smoky, spicy flavor.  No need to soak your beans when you cook them in a crock pot.

Rinse your pinto beans

Chop 4 slices of bacon

Add a can of Rotel spicy tomatoes with chilies

4 cups water

Line the crock pot with a Crock Pot Liner or spray it so food won't stick.  Add the bacon to the bottom, top with the beans, pour in the Rotel tomatoes, add 4 cups of water.  Water should be 1 - 2 inches above the beans.  Cook on low for 9 hours.  I added 4 more cups of water half way through.  If you will be gone all day, add 8 cups of water at the start of cooking.  

Smoky and spicy pinto beans are great served over rice, cornbread, tortillas, in soups.  The cooked beans can even be frozen in smaller servings.

Spaghetti Squash is a winter squash, has a hard shell, and can store for several months.  An easy way to cook spaghetti squash is in the crock pot or slow cooker.

Spaghetti Squash can be hard to cut, and you don't need to cut it to cook it in the crock pot.  Pierce the squash on outside several times.  The piercings will allow steam to escape during cooking.

Set your squash into the crock pot, add 2 cups of water, and cook on low 4 to 6 hours.

Remove your spaghetti squash from the crock pot, allow it to cool for 20 minutes, then cut your squash in half.  

Remove and discard seeds.  

Scoop along the squash with a fork for nice, long, strands of squash spaghetti noodles.  

Serve your spaghetti squash strands with your favorite sauce, with butter, or use in lasagna recipes.


The flavors and creamy texture of pumpkin with chili is a real taste treat.  It doesn't have to be fall to add pumpkin to your chili recipe.

To make pumpkin chili on the stove top or in your crockpot, add a can of pumpkin along with the standard chili ingredients found in this recipe.  In your crock pot, add

1 can of pumpkin

1 can of black beans, undrained

1 can of zesty or fire roasted diced tomatoes

1 pound freshly ground beef

1 chopped onion

1 chopped green pepper, seeds and rind removed

2 Tablespoons chili powder

1 Tablespoon Adobo seasoning 

Set the crock pot on high for 4 hours, or low for 8 hours.

For the stove top version, brown the ground beef, drain fat.  Chop and add onion and green pepper.  Cook about 5 minutes.  Add black beans, diced tomatoes, pumpkin, 2 Tablespoons chili powder, 1 Tablespoon Adobo seasoning, and 1 - 2 cups water.

Bring Pumpkin Chili to a boil, put on a lid, and simmer 30 minutes.

Pumpkin Chili is a creamy delicious meal all year round whether you cook it in the crock pot, or on the stove top.





Mix your own Adobo Seasoning to add to my recipe for Pumpkin Chili.  Adobo Seasoning is a combination of 7 seasonings you probably have in your pantry or cupboard.  

1/4 cup Paprika

3 Tablespoons Black Pepper

2 Tablespoons Onion Powder

2 Tablespoons Oregano

2 Tablespoons Cumin

1 Tablespoon Chili Powder

1 Tablespoon Garlic Powder

Stir together and store in an air tight container

Making your own seasoning mixes can allow you to control the flavors, ingredients, and save money using what you have to make what you need.

Adobo is a flavor common to Latin America and the Philippines.  Stir together some of this flavorful mix and add a dash to your favorite dishes.

Years ago, friends from Russia taught me how to make a lovely mulled blackberry jam and honey drink called Sbiten.  Stir the ingredients into the crockpot, and allow the flavors to mull.  Strain before serving if you like.  

This can be left to simmer all day on low, so it is ready whenever you come in from the cold.  Enjoy some while you watch the Winter Olympics from Sochi, Russia!
